Venison Bleu Cheese Steak Burgers
1 lb. ground venison (elk, or moose)
1/3 cup crumbled bleu cheese
1 tbsp Montreal steak seasoning (McCormick’s)
2 tbsp bread crumbs
2-4 large hamburger buns
The steak seasoning mixed with the bleu cheese kicks these burgers over the top. The egg is added for a binder and the bread crumbs for retaining moisture. Bread crumbs can be substituted with 2 tbsp non-fat dry milk. Neither add flavor, just retain moisture. Mix all ingredients together. Form into 2, 3, or 4 patties depending on your appetite. Grill, broil, or fry throughout until pink is just gone. Lay them on a toasted bun and stack on your favorite burger toppings. Can’t go wrong with a pile of caramalized onions on top.
