Jackson’s Bacon Wrapped Jalapenos

This is an easy recipe that I learned from my hunting partner and fellow Mossy Oak Pro-staffer Mark Jackson.

Required items:

You’ll need fresh Jalapenos, a package of bacon, a block of pepper jack cheese, some wooden skewers, a core remover, a cheese grater and a sharp knife.

First step is to remove the top of the pepper and the seeds; I have found a core remover does a great job.

Once you have removed the seeds you have your cavity for stuffing,

Stuff the pepper with grated pepper jack cheese

Insert the skewer through 1 end of a piece of bacon and into the bottom of the pepper

Wrap the bacon around the pepper all the way to the top, push the skewer all the way through and replace the top of the pepper that you previously cored out (this will help hold the cheese in during cooking)

Once you get a plate full of stuffed/wrapped peppers you are ready to cook.

Place on a hot grill and cook until the bacon is completely done on all sides, rotating the pepper approximately every 2-3 minutes. I have also cooked this on a griddle and it has worked fine.

Once the bacon is cooked the peppers are done. These make an easy appetizer for your hunting camp and you can never cook enough of them.
